Actually, this is censored. We could have taken the camera directly to the meat market and shown you the dirty wooden table, crawling with flies and cow blood (and other sundry cow parts). Instead, we take you to our kitchen, after Ben has carefully trimmed off all of the fat, bone, and gristle. He has even run it through our meat grinder once and is beginning the second run through in this picture.
I appreciate Ben so much for taking care of this very time consuming project about once a month. We usually buy about 8 kilos of cow leg (over 17 lbs.) and after all the trimming and grinding, end up with about 9 lbs. of ground beef. It takes about 3 hours time to get the job done and then we weigh it out and put it in the freezer. After eating this fresh beef in Cameroon, I had a hard time getting the packaged meat at Wal-Mart. It was so gross to me. While it is a lot of work to trim and grind (and clean up! That is my job)...it sure tastes a lot better!

Love the title. It is perfect. I think that becoming one with your ground beef as Ben is in the picture as well as the 3 or so hours you put into processing it make it taste that much better.
This is something I don't want to be around for. LOL
